Salmon, Edamame & Soba Noodle Salad

I’ve been making this dish on repeat for Andi and I, as well as for friends and family. It’s the perfect quick weeknight dinner, but it’s also so tasty and beautiful that it makes a wonderful meal to spoil someone special. All the ingredients pair effortlessly together, the flavours really shine, and I can promise you — the bowls will be clean.

Serves: 2

In Your Kit

  • 2 portions salmon

Marinade

  • Tamari
  • Honey

Salad

  • 1 pack soba noodles
  • 2 spring onions
  • ½ bunch coriander
  • 1 pack edamame beans
  • Sesame seeds
  • 1 avocado
  • 1 pack wasabi peas

Dressing

  • Sushi mayo
  • Sweet chilli sauce
  • Tamari

Preparation

  • Slice the spring onions.
  • Roughly chop the coriander.
  • Place edamame beans in boiling water, allow to stand for a few minutes, then drain.
  • Slice the avocado.

Instructions

1. Prepare the Salmon

  1. Preheat the oven to 180°C (conventional) or 160°C (fan-forced). Or Air fryer 160°C
  2. Place the salmon on a lined baking tray.
  3. Pour the marinade over the fish.
  4. Roast for 10–15 minutes, depending on thickness and how well done you like your fish. (8 – 10 min in the Air fryer)
  5. Remove from the oven and set aside to rest.

2. Cook the Noodles & Assemble the Salad

  1. Bring a pot of water to a rapid boil. (do not add salt)
  2. Cook the soba noodles for 4–5 minutes.
  3. Drain and rinse under cold water to cool. (Optional: toss with a little sesame oil to prevent sticking.)
  4. In a large bowl, combine the soba noodles, spring onion, coriander, edamame, avocado and sesame seeds.
  5. Gently mix to combine.
  6. Divide the salad between two bowls.

3. Finish & Serve

  • Top each bowl with a salmon fillet.
  • Pour over the dressing.
  • Sprinkle with crushed wasabi peas
  • Serve and enjoy.
