Cape Salmon with Beurre Blanc

Last Sunday I made this dish for my besties, and it turned into one of those really special, unplanned evenings.

It was pouring outside (proper Cape Town weather), but inside we had a glass of bubbles in hand, good food on the table, and for a moment it honestly felt like a warm summer evening.

There’s something about cooking for people you love — keeping it simple, letting the ingredients speak for themselves, and just enjoying the moment without overthinking it. This dish came together so easily, and that’s exactly why I love it.

Fresh Cape Salmon Portions

Why Cape Salmon?

Cape salmon is one of those local fish that I think deserves a lot more love. It’s beautifully firm, full of flavour, and incredibly versatile. You might be more familiar with Cape Salmon’s other name, Geelbek, which it is named after from its yellow mouth and gills.

It’s also at its best in the colder months. As the water temperature drops, the fish firms up and the quality is just that much better, making winter the perfect time to enjoy it.


Cooking Cape Salmon Portions (Pan-Fried in Butter & Olive Oil)

This is my go-to way of cooking Cape salmon — simple, no fuss, and it lets the fish shine.

Ingredients

  • Cape salmon portions
  • Salt & black pepper
  • Olive oil
  • Butter

Method

  1. Pat the fish dry with kitchen paper.
  2. Season well with salt and black pepper.
  3. Heat a pan over medium-high heat with a drizzle of olive oil.
  4. Place the fish in the pan and leave it to cook undisturbed for 3–4 minutes.
  5. Add a knob of butter and let it foam.
  6. Turn the fish and cook for another 2–3 minutes, basting with the butter.
  7. Remove from the pan while still juicy — it should flake easily but not be dry.

💡 Tip: Cape salmon is best when it’s not overcooked — keep it moist and tender.

Classic Beurre Blanc

This sauce is what takes the dish from simple to something really special.

Ingredients

  • 1 small shallot, finely chopped
  • 100ml dry white wine
  • 1–2 tbsp white wine vinegar
  • 125g cold butter, cubed
  • Salt, to taste

Method

  1. Add the shallot, wine, and vinegar to a saucepan.
  2. Simmer until reduced to about 1–2 tablespoons.
  3. Lower the heat and start whisking in the cold butter, a few cubes at a time.
  4. Keep whisking until the sauce is smooth and glossy.
  5. Season lightly with salt.

💡 Keep the heat low — if it gets too hot, the sauce can split.

Bringing It All Together

I recommend your serve your Cape Salmon with

  • A generous spoon of beurre blanc
  • Simple roasted vegetables in olive oil and rosemary
  • A fresh green bean salad with roasted mixed seeds

It’s the kind of meal that feels a little bit fancy, but is actually so easy to put together, perfect for a relaxed Sunday lunch or even a cozy evening in when the weather isn’t playing along.
