LALUNGA YELLOWTAIL RIBBONS, COLD SMOKED

Yellowtail offers a firm, white flesh with rosy hues, and is full of flavour. Despite being known for a naturally high fat content, yellowtail can quickly become dry if over-cooked. However, due to both the excellent starting quality and Lalunga’s low temperature smoking process, their cold-smoked yellowtail retains its moisture and flavour. The texture is firm while the flavour remains subtle with well-balanced sweet smoky undertones.
